Amaranta is a wonderful place, with warm hospitality and impeccable service in the center of Toluca. Chef Pablo Salas's menu, based on Mexican cuisine, reinterprets traditional flavors with creativity and respect. We especially recommend the plantain tamale with mole, a comforting and surprising delight, and the popcorn with guava paste dessert, simply spectacular. The wine list is also extensive, and the cocktails are excellent! For breakfast or lunch... don't miss it!
Good service, well-presented food, and tasty. A good portion. The place is a bit small, and valet parking is available for an additional fee.
The food wasn't good. The arrachera was average, nothing special, and the chilaquiles were very sour. The dish wasn't worth the price.
A small place with great Mexican cuisine. The tasting menu and the cooking time are spectacular. If you're in Toluca, don't miss Amaranta.

I debated a lot about writing this review. I went to the breakfast service over the weekend and it was disappointing. I ordered the arrachera with chilaquiles. The chilaquiles were soggy and lukewarm. The sauce was not at all a traditional recipe or an improvement on a classic recipe. In fact, it's very similar to the "Doña María" bottled sauces. And the arrachera, my goodness, was a total disaster. It was cold and runny, completely unlike what an arrachera should be. How can you screw it up? The only thing I can think of is that it was sealed, set aside, or stored and reheated when they gave it to me.I still can't understand how a restaurant that prides itself on "modern" Mexican cuisine can fail so badly and in such a way.Do they only put their best effort into tasting dishes? I wouldn't want to imagine paying a premium price for such basic, simple, and substandard dishes.Based on my experience and disappointment, I don't think it should be called a "fine dining" restaurant. It simply has high prices so its typical diners can imagine being able to afford a Condesa-style restaurant in Toluca.
There is no doubt that the food is very good but their service is a mess, it is unfortunate that a chef like Pablo Salas is affected by this. They say that reservations are not taken “as they arrive”, I waited an hour for them to start considering me, I think I don't have to explain why it is silly, I decided to practically get in the way so that they would “pay more attention” to me, in general the organization is terrible and they just waste your time.
