Each pizza dough undergoes a meticulous 72-hour double fermentation at a controlled 11°C, crafted from Italian strong flour with a 77% hydration, resulting in a perfectly balanced crust that is thin, soft, and elastic at the center with attractively thick and fluffy edges. The pizzas are baked quickly—between 60 to 90 seconds—at extremely high temperatures of 450 to 500 degrees Celsius in a handmade stone refractory oven from Naples. This oven, fueled by both wood and gas, imparts a distinctive smoky aroma enhancing the flavor experience.

Bigalia’s menu showcases simplicity and quality, using fresh mozzarella, extra virgin olive oil, and basil alongside their signature tomato base. The traditional Neapolitan pizza is sized at 11-12 inches in diameter, preserving its texture and freshness with every bite. Recognized by the Italian government for promoting Neapolitan culture in Argentina, Bigalia is the only pizzeria in Mendoza fully certified by the Accademia Nazionale Pizza DOC, making it a must-visit for both locals and tourists craving true Italian pizza.
