The Best Dining Experience in the World Central is, without a doubt, the number one restaurant on the planet. The entire experience—from the storytelling behind each dish to the flawless execution—is unforgettable. Virgilio Martínez, the visionary chef and owner, is one of the most creative talents in the culinary world today. His ability to take you on a journey through Peru’s ecosystems, altitudes, and ingredients is nothing short of genius. Every course is a revelation.The tasting menu is a beautifully choreographed journey through Peru’s diverse landscapes—from the Amazon to the Andes to the Pacific. Dishes like “Extreme Altitude” and “Amazonian Water” are not only exquisite in flavor, but also rooted in deep cultural and ecological meaning. The presentation is stunning, and each plate tells a story.The service and coordination were absolutely perfect, making the entire experience seamless. The liquor pairing (maridaje) was outstanding—thoughtfully curated to elevate each dish. Dining at Central is not just a meal—it’s a profound, inspiring experience. Everything in the restaurant is a work of art: the utensils, the plates, even the bathroom... and the staff's attention is unbeatable... but although each of the 13 tasting dishes is incredibly decorated and they give you a very good explanation, and the staff is very friendly and attentive to every detail, the flavors of the dishes are average. Since the dishes are sophisticated, they use unusual ingredients (peels, leaves, etc.), some of them upset my stomach, and when I got home I had food poisoning - hives and diarrhea 😔 (at the beginning they ask if you have any allergies, but I don't).
An unforgettable experience and an explosion of incredible flavors in every dish. The menu takes you on a journey through Peru, and everything is thought out down to the smallest detail. Each course has special cutlery and plates representing the ecosystem, sometimes accompanied by small books and beautiful illustrations about the ingredients used. The waiters were the best service I've ever received in a restaurant—they were extremely attentive and on top of everything, explaining many things about the food and answering all our questions with great insight.It's a unique gastronomic experience; you learn a lot about Peruvian ingredients, and the menu is a perfect reflection of the incredible richness and variety of Peruvian ingredients and ecosystems.
Good food but really superficial staff. The food is worth the price tag though
Central was the main reason for our entire trip to Lima, and once we got the reservation, I was able to book everything else. The restaurant is much larger than I thought, with two large, connected areas. The menu focuses heavily on altitude, from produce below sea level to 4,000 meters above sea level. I've included tons of photos of our experience, but the combination of the location, the food, the service, and the stories behind each dish is simply spectacular.
