Here, there's no invention, it's respect. There's no exaggeration, it's perfected.Each dish is a tribute to Humberto Sato's legacy, with flavors that speak silently and a technique that requires no boasting.The atmosphere is understated, elegant, with ocean views and a relaxed energy that invites you to enjoy without rushing.🍽️ My must-trys:
• The classic ceviche: precise, with tiger's milk that respects the fish, without excess, without distraction. A ceviche that doesn't shout, but still commands attention.
• The chita a la sal (chickpea with salt), a work of art served with ceremony. Cooked to perfection, smooth, and delicate. It's a dish to remember.
• Japanese oysters: fresh, cold, elegant.
• Scallops: tender and served with delicacy.
• Octopus in olive oil: perfect texture, with a light and enveloping olive cream.
• Nigiri: Not extravagant or overpowered: they're elegant, balanced, and true to the house style.
• And for dessert, the crema volteada: an unexpected and addictive ending.The service is attentive, classic, and unpretentious.
