Puebla is famous for its cuisine, and one of its favorites is chiles en nogada, which is only prepared in season, specifically in July, August, and September, since some of its ingredients are harvested during those months. It's difficult to find a place in Puebla to taste this delicious dish (since all the restaurants are packed during this time of year to eat chiles en nogada). My family and I had to eat it at La Selva. It's a beautiful, very typical restaurant in the area. We ate chiles and authentic Puebla mole. And I must say that I'm not exaggerating when I say this: the food is a true delicacy. The kitchen is open to everyone, with a very Mexican style. It's interesting to watch how they cook and then experience those unique flavors. The place has a wide variety of typical dishes from the center of the country. I would gladly return.
